The representative wine of Salento , the pride of the production of the Tormaresca winery . The Primitivo di Tormaresca boasts the IGT certification and is produced with 100% pure Primitivo grapes . The selection of vineyards comes from old Primitivo vineyards trained as saplings and from spurred cordon vineyards at the Tenuta Maìme in San Pietro Vernotico in the province of Brindisi. The grapes were harvested when slightly overripe during the first week of September. After pressing, the maceration, managed with gentle pumping over and delèstage, was continued for 15 days in stainless steel tanks. During this phase, the wines completed the alcoholic fermentation at a temperature no higher than 26 °C. After racking, the wine underwent malolactic fermentation directly in French and Hungarian oak barriques, in which it was aged for approximately 10 months. This was followed by a further 8 months of bottle ageing before being released onto the market.
